Ingredients

Instructions

  1. In a large bowl, mash black beans with a fork or potato masher, leaving some chunks for texture.
  2. Add cooked brown rice, finely diced red onion, jalapeno powder, cumin, chipotle powder (if using), and panko breadcrumbs. Mix thoroughly. The mixture should be firm enough to form patties; add more breadcrumbs if too wet.
  3. Form the mixture into 3 patties, about 3/4 inch thick.
  4. Heat a little oil in a skillet over medium heat. Cook patties for 6-8 minutes per side, until browned and heated through. Be careful not to overcrowd the pan.
  5. For the avocado crema, mash avocado with fresh lime juice and Greek yogurt (if using). Season with salt to taste.
  6. Serve burgers on buns with avocado crema and any desired toppings such as lettuce, tomato, or sprouts.
