Vegetarian Black Bean Burgers with Avocado Crema
Flavorful black bean burgers on buns, topped with a creamy avocado sauce. Great for adults and toddlers.
Ingredients
- 1.5 cups Black Beans (canned, rinsed and drained)
- 1 cup Cooked Brown Rice
- 1/2 cup Red Onion (diced finely)
- 1/2 tsp Jalapeno Powder
- 1 tsp Ground Cumin
- 1/2 cup Panko Breadcrumbs
- 3 Hamburger Buns
- 1 Avocado (ripe)
- 1 tbsp Lime Juice (fresh)
- 2 tbsp Plain Greek Yogurt (full fat, optional)
- 1/4 tsp Chipotle Powder (optional, for smokiness)
Instructions
- In a large bowl, mash black beans with a fork or potato masher, leaving some chunks for texture.
- Add cooked brown rice, finely diced red onion, jalapeno powder, cumin, chipotle powder (if using), and panko breadcrumbs. Mix thoroughly. The mixture should be firm enough to form patties; add more breadcrumbs if too wet.
- Form the mixture into 3 patties, about 3/4 inch thick.
- Heat a little oil in a skillet over medium heat. Cook patties for 6-8 minutes per side, until browned and heated through. Be careful not to overcrowd the pan.
- For the avocado crema, mash avocado with fresh lime juice and Greek yogurt (if using). Season with salt to taste.
- Serve burgers on buns with avocado crema and any desired toppings such as lettuce, tomato, or sprouts.
