Vegan Potato & Onion Grilled Cheese

  1. Thinly slice potato using a mandoline or sharp knife. Thinly slice onion. Mince garlic.
  2. Melt 1 tbsp vegan butter in a pan over medium-low heat. Add onions and garlic, cooking slowly until deeply caramelized, about 15 minutes. Set aside.
  3. In the same pan, melt remaining vegan butter. Lightly fry potato slices until tender and slightly golden, about 5-7 minutes. Season with salt, pepper, and a pinch of nutmeg.
  4. Butter one side of each slice of bread.
  5. Place one slice of bread, butter-side down, in a clean pan over low heat.
  6. Layer vegan cheese slices, fried potato slices, and caramelized onions and garlic.
  7. Top with the other slice of bread, butter-side up.
  8. Grill until golden brown and cheese is melted, flipping once, about 3-5 minutes per side. Press down gently with a spatula to help the cheese melt.
