Vegan Potato & Onion Grilled Cheese
A gourmet grilled cheese with caramelized onions, sliced potatoes and vegan cheese.
Ingredients
- 1/2 medium Potato
- 1/4 medium Onion
- 1 clove Garlic
- 2 tbsp Vegan butter
- 2 Vegan cheddar cheese slices
- 2 slices Bread
- Pinch Nutmeg
Instructions
- Thinly slice potato using a mandoline or sharp knife. Thinly slice onion. Mince garlic.
- Melt 1 tbsp vegan butter in a pan over medium-low heat. Add onions and garlic, cooking slowly until deeply caramelized, about 15 minutes. Set aside.
- In the same pan, melt remaining vegan butter. Lightly fry potato slices until tender and slightly golden, about 5-7 minutes. Season with salt, pepper, and a pinch of nutmeg.
- Butter one side of each slice of bread.
- Place one slice of bread, butter-side down, in a clean pan over low heat.
- Layer vegan cheese slices, fried potato slices, and caramelized onions and garlic.
- Top with the other slice of bread, butter-side up.
- Grill until golden brown and cheese is melted, flipping once, about 3-5 minutes per side. Press down gently with a spatula to help the cheese melt.
