  2. Heat olive oil in a large skillet over medium-high heat. Add potatoes and cook, stirring occasionally, until they start to brown and become slightly crispy, about 8-10 minutes.
  3. Add onion and garlic to the skillet and cook until the onion is softened and lightly caramelized, about 5-7 minutes. Stir frequently to prevent burning.
  4. Stir in baked beans, smoked paprika, chili powder, cumin, cayenne pepper (if using), salt, and pepper. Cook for another 5 minutes, stirring occasionally, allowing the flavors to meld together.
  5. Stir in fresh cilantro.
