Vegan Potato and Onion Hash with Black Beans
A hearty and spicy vegan hash made with diced potatoes, caramelized onions, black beans, and smoky spices.
Ingredients
- 1 medium Yukon Gold Potato
- 1/2 medium Yellow Onion
- 2 cloves Garlic
- 1/2 cup Baked Beans
- 2 tbsp Olive oil
- 1/2 tsp Smoked paprika
- 1/2 tsp Chili powder
- 1/4 tsp Cumin
- Pinch (optional) Cayenne pepper
- 1/4 tsp Salt
- 1/4 tsp Black pepper
- 1 tbsp Fresh cilantro, chopped
Instructions
- Dice the potato into 1/2-inch cubes. Thinly slice the onion and mince the garlic.
- Heat olive oil in a large skillet over medium-high heat. Add potatoes and cook, stirring occasionally, until they start to brown and become slightly crispy, about 8-10 minutes.
- Add onion and garlic to the skillet and cook until the onion is softened and lightly caramelized, about 5-7 minutes. Stir frequently to prevent burning.
- Stir in baked beans, smoked paprika, chili powder, cumin, cayenne pepper (if using), salt, and pepper. Cook for another 5 minutes, stirring occasionally, allowing the flavors to meld together.
- Stir in fresh cilantro.
- Serve hot, garnished with extra cilantro, if desired.
