Tomato-Broccoli Stir-Fry with Toasted Sesame Seeds & Apple Slaw
A savory stir-fry of tomatoes and broccoli with toasted sesame seeds, served with a refreshing apple slaw.
Ingredients
- 1 large head Broccoli florets
- 1/2 (28 ounce) can Canned diced tomatoes
- 2 tbsp Low-sodium soy sauce
- 1 tbsp Sesame oil
- 4 cloves, minced Garlic
- 1 tbsp minced Fresh ginger
- 2 tbsp, toasted Sesame seeds
- 3 Large Gala Apples
- 2 tbsp Rice vinegar
- 1 tbsp Honey
- 2 tbsp Mayonnaise
Instructions
- Prepare the apple slaw: Core and julienne apples. In a bowl, whisk together rice vinegar, honey, and mayonnaise. Toss with apples and set aside.
- Heat sesame oil in a large skillet or wok over medium-high heat. Add garlic and ginger and stir-fry for 30 seconds until fragrant.
- Add broccoli florets and canned tomatoes. Stir-fry for 5 minutes.
- Add low-sodium soy sauce and continue to stir-fry for another 3-5 minutes, until broccoli is tender-crisp and tomatoes are slightly softened.
- Stir in toasted sesame seeds.
- Serve the tomato-broccoli stir-fry immediately with a side of apple slaw.
