  1. Prepare the apple slaw: Core and julienne apples. In a bowl, whisk together rice vinegar, honey, and mayonnaise. Toss with apples and set aside.
  2. Heat sesame oil in a large skillet or wok over medium-high heat. Add garlic and ginger and stir-fry for 30 seconds until fragrant.
  3. Add broccoli florets and canned tomatoes. Stir-fry for 5 minutes.
  4. Add low-sodium soy sauce and continue to stir-fry for another 3-5 minutes, until broccoli is tender-crisp and tomatoes are slightly softened.
  5. Stir in toasted sesame seeds.
  6. Serve the tomato-broccoli stir-fry immediately with a side of apple slaw.
