Thai Mushroom Noodle Bowl
A light and tasty noodle bowl with mushrooms in a savory Thai-inspired sauce.
Ingredients
- 250g, sliced Mushrooms
- 300g, thin or wide Rice noodles
- 1/4 cup Sauce
- 1 tbsp Lime juice
- 1 tbsp Soy sauce, low sodium
- 2 stalks, sliced Green onions
- 1 tbsp Sesame oil
- 3 cloves, minced Garlic
- 1 tsp minced Ginger
- 1/4 tsp Red pepper flakes (optional)
- To taste Salt
- To taste Black pepper, freshly ground
Instructions
- Cook rice noodles according to package instructions. Drain and set aside.
- In a small bowl, whisk together sauce, fresh lime juice, and soy sauce. Set aside.
- Heat sesame oil in a skillet or wok over medium heat. Add minced garlic and ginger and sauté until fragrant, about 1 minute.
- Add sliced mushrooms and cook until softened and lightly browned, about 5-7 minutes.
- Pour in the sauce mixture and bring to a simmer. Cook for 2-3 minutes.
- Add cooked noodles to the pan and toss to coat evenly with the sauce.
- Garnish with sliced green onions and red pepper flakes (if using).
- Serve hot.
