  1. Cook rice noodles according to package instructions. Drain and set aside.
  2. In a small bowl, whisk together sauce, fresh lime juice, and soy sauce. Set aside.
  3. Heat sesame oil in a skillet or wok over medium heat. Add minced garlic and ginger and sauté until fragrant, about 1 minute.
  4. Add sliced mushrooms and cook until softened and lightly browned, about 5-7 minutes.
  5. Pour in the sauce mixture and bring to a simmer. Cook for 2-3 minutes.
  6. Add cooked noodles to the pan and toss to coat evenly with the sauce.
  7. Garnish with sliced green onions and red pepper flakes (if using).
  8. Serve hot.
