Thai Green Curry with Chicken and Vegetables
A fragrant Thai green curry with tender chicken and a variety of colorful vegetables, served with rice.
Ingredients
- 1.5 lb Boneless, Skinless Chicken Breast
- 2 tbsp Green Curry Paste
- 1 can (400ml) Coconut Whipping Cream
- 1 cup, sliced Bamboo Shoots
- 1 cup Broccoli Crowns
- 1/2, sliced Red Bell Pepper
- 1 tbsp Fish Sauce
- 1 tbsp Lime Juice
- 1 tsp Sugar
- 3 cups Cooked Rice
- 1/4 cup, chopped Fresh Basil Leaves
Instructions
- Cut chicken into bite-sized pieces.
- In a pot or Dutch oven, heat 1 tbsp oil over medium heat. Sauté green curry paste until fragrant, about 1 minute.
- Add chicken and cook until browned on all sides.
- Pour in coconut milk, fish sauce, lime juice, and sugar. Bring to a simmer.
- Add bamboo shoots, broccoli florets, and red bell pepper.
- Simmer until vegetables are tender, about 8-10 minutes.
- Stir in fresh basil leaves just before serving.
- Serve hot over cooked rice.
