  1. Cut chicken into bite-sized pieces.
  2. In a pot or Dutch oven, heat 1 tbsp oil over medium heat. Sauté green curry paste until fragrant, about 1 minute.
  3. Add chicken and cook until browned on all sides.
  4. Pour in coconut milk, fish sauce, lime juice, and sugar. Bring to a simmer.
  5. Add bamboo shoots, broccoli florets, and red bell pepper.
  6. Simmer until vegetables are tender, about 8-10 minutes.
  7. Stir in fresh basil leaves just before serving.
  8. Serve hot over cooked rice.
