Thai Green Curry Chicken Stir-Fry
Aromatic Thai green curry with tender chicken and vibrant vegetables, enriched with fish sauce and lime, served over jasmine rice for an exotic dinner.
Ingredients
- 1.5 lbs, cut into bite-sized pieces Chicken breast
- 1, sliced Sweet Peppers
- 1 cup Broccoli florets
- 3 tbsp (adjust to taste) Thai green curry paste
- 2 pouches mixed with 1 cup water Coconut Milk Powder
- 1 tbsp (or to taste) Fish sauce
- 1 tbsp fresh Lime juice
- 1 tsp Brown sugar
- 3 cups cooked Jasmine rice
Instructions
- Mix coconut milk powder with 1 cup of water and set aside.
- Stir-fry chicken in a wok or large skillet over medium-high heat until browned. Add sweet peppers and broccoli florets; cook until tender-crisp.
- Add Thai green curry paste and stir until fragrant, about 1 minute.
- Pour in coconut milk, fish sauce, lime juice, and brown sugar. Simmer until sauce thickens slightly, about 5 minutes.
- Taste and adjust seasonings as needed, adding more fish sauce for saltiness or lime juice for acidity.
- Serve hot over jasmine rice.
