Thai Coconut Cabbage and Sausage Curry
A fragrant and flavorful Thai-inspired curry with cabbage, sausage, and coconut milk, served over rice.
Ingredients
- 1/2 medium Green Cabbage
- 500g Sausage
- 400 ml Coconut Milk
- 2 tbsp Red Curry Paste
- 1.5 cups Rice
- 1 tbsp Fish Sauce
- 1 tsp Brown Sugar
- 1 tbsp Lime Juice
- 2 tbsp chopped Fresh Cilantro
Instructions
- Cook the rice according to package instructions.
- Slice the sausage and shred the cabbage.
- In a large skillet or pot, heat coconut milk over medium heat.
- Add red curry paste and stir until well combined.
- Add sliced sausage and shredded cabbage to the pot. Cook until cabbage is tender. Ensure sausage is cooked to a safe internal temperature.
- Stir in fish sauce, brown sugar, and lime juice.
- Simmer for another 5-10 minutes, allowing the flavors to meld.
- Stir in fresh cilantro before serving.
- Serve over cooked rice.
