  1. Cut pork into bite-sized pieces. Marinate with a pinch of salt, pepper, and 1 tbsp cornstarch for 10 minutes.
  2. Mince the garlic and grate the ginger.
  3. In a large skillet or wok, heat 1 tbsp oil over high heat. Stir-fry pork until browned and cooked through. Set aside.
  4. Add pineapple chunks, bell peppers, and onion to the skillet. Stir-fry until slightly softened.
  5. Add garlic and ginger to the skillet and cook until fragrant, about 30 seconds.
  6. Pour sweet and sour sauce over the mixture. Simmer until the sauce thickens, stirring occasionally.
  7. Return pork to the skillet and toss to coat with the sauce.
  8. Serve hot over cooked rice.
