Sweet and Sour Pork Stir-Fry
A quick and flavorful stir-fry featuring boneless pork in a classic sweet and sour sauce, served with rice.
Ingredients
- 1.5 lb Boneless Pork Center Chops or Roast
- 1 cup Pineapple Chunks
- 1.5 cup Bell Peppers (mixed colors)
- 1 medium Onion
- 1 cup Sweet and Sour Sauce
- 3 cups Cooked Rice
- 2 cloves, minced Garlic
- 1 tsp, grated Ginger
Instructions
- Cut pork into bite-sized pieces. Marinate with a pinch of salt, pepper, and 1 tbsp cornstarch for 10 minutes.
- Mince the garlic and grate the ginger.
- In a large skillet or wok, heat 1 tbsp oil over high heat. Stir-fry pork until browned and cooked through. Set aside.
- Add pineapple chunks, bell peppers, and onion to the skillet. Stir-fry until slightly softened.
- Add garlic and ginger to the skillet and cook until fragrant, about 30 seconds.
- Pour sweet and sour sauce over the mixture. Simmer until the sauce thickens, stirring occasionally.
- Return pork to the skillet and toss to coat with the sauce.
- Serve hot over cooked rice.
