Strawberry Swirl Cottage Cheese Ice Cream
A refreshing strawberry swirl ice cream that is packed with protein from cottage cheese.
Ingredients
- 2 cups Cottage cheese
- 1 cup Fresh strawberries
- 1 tbsp Lemon juice
- 1/2 cup Maple syrup
- 1 tsp Vanilla extract
- 1 tsp Balsamic vinegar
- 1/4 tsp Salt
Instructions
- Hull and quarter the strawberries. In a small saucepan, combine the strawberries with lemon juice and 1/4 cup of maple syrup.
- Cook over medium heat for 5-7 minutes, stirring occasionally, until the strawberries soften and release their juices. Remove from heat and let it cool slightly.
- Blend cottage cheese until very smooth. Add vanilla extract, balsamic vinegar, remaining maple syrup, and salt; blend until combined.
- Chill the mixture in the refrigerator along with the strawberry sauce for at least 30 minutes.
- Pour a layer of cottage cheese mixture into an ice cream maker, then swirl in some cooled strawberry sauce. Repeat layers.
- Churn according to the manufacturer’s instructions.
- Transfer to an airtight container and freeze for at least 2 hours before serving. Garnish with fresh strawberry slices before serving.
