  1. Hull and quarter the strawberries. In a small saucepan, combine the strawberries with lemon juice and 1/4 cup of maple syrup.
  2. Cook over medium heat for 5-7 minutes, stirring occasionally, until the strawberries soften and release their juices. Remove from heat and let it cool slightly.
  3. Blend cottage cheese until very smooth. Add vanilla extract, balsamic vinegar, remaining maple syrup, and salt; blend until combined.
  4. Chill the mixture in the refrigerator along with the strawberry sauce for at least 30 minutes.
  5. Pour a layer of cottage cheese mixture into an ice cream maker, then swirl in some cooled strawberry sauce. Repeat layers.
  6. Churn according to the manufacturer’s instructions.
  7. Transfer to an airtight container and freeze for at least 2 hours before serving. Garnish with fresh strawberry slices before serving.
