Strawberry Crème Brûlée Cups
Indulgent French crème brûlée gets a fruity twist with fresh strawberries in convenient single-serve cups.
Ingredients
- 1 1/2 cups Heavy Cream
- 3 Large Egg Yolks
- 1/4 cup + 3 tbsp for topping Granulated Sugar
- 1 tsp Vanilla Extract
- 1 cup Fresh Strawberries, sliced
- Pinch Pinch of Salt
Instructions
- Preheat oven to 300°F (150°C). Place ramekins in a baking pan.
- In a saucepan, heat heavy cream and a pinch of salt over medium heat until simmering. Remove from heat.
- In a separate bowl, whisk egg yolks and 1/4 cup granulated sugar until pale and slightly thickened.
- Gradually whisk hot cream into the egg yolk mixture to temper the eggs.
- Stir in vanilla extract and gently fold in sliced strawberries.
- Pour the mixture into the prepared ramekins. Add hot water to the baking pan to reach halfway up the sides of the ramekins (water bath).
- Bake for 30-35 minutes, or until the edges are set but the center is still slightly wobbly.
- Remove from the oven and let cool completely in the water bath. Then, refrigerate for at least 2 hours to chill thoroughly.
- Before serving, sprinkle 1 tablespoon of granulated sugar evenly over the top of each crème brûlée. Use a kitchen torch to caramelize the sugar until golden brown and crisp.
- Let the caramelized sugar cool for a minute before serving.
