  1. Preheat oven to 300°F (150°C). Place ramekins in a baking pan.
  2. In a saucepan, heat heavy cream and a pinch of salt over medium heat until simmering. Remove from heat.
  3. In a separate bowl, whisk egg yolks and 1/4 cup granulated sugar until pale and slightly thickened.
  4. Gradually whisk hot cream into the egg yolk mixture to temper the eggs.
  5. Stir in vanilla extract and gently fold in sliced strawberries.
  6. Pour the mixture into the prepared ramekins. Add hot water to the baking pan to reach halfway up the sides of the ramekins (water bath).
  7. Bake for 30-35 minutes, or until the edges are set but the center is still slightly wobbly.
  8. Remove from the oven and let cool completely in the water bath. Then, refrigerate for at least 2 hours to chill thoroughly.
  9. Before serving, sprinkle 1 tablespoon of granulated sugar evenly over the top of each crème brûlée. Use a kitchen torch to caramelize the sugar until golden brown and crisp.
  10. Let the caramelized sugar cool for a minute before serving.
