Spinach & Egg Breakfast Burrito Bowls
Deconstructed breakfast burritos with seasoned scrambled eggs, black beans, spinach, bell peppers, and a creamy lime sour cream.
Ingredients
- 4 large Eggs
- 1 cup, diced Mini Bell Peppers
- 2 cups, chopped Spinach
- 1 can (15 oz), rinsed and drained Canned Black Beans
- 2 tbsp Sour Cream
- 1/2 cup Shredded Cheddar Cheese
- 1/2, diced Avocado
- 1/2 tsp Chili Powder
- 1/2, juiced Lime
- 1/4 tsp Cumin
- 1/4 tsp Garlic Powder
Instructions
- In a bowl, whisk eggs with chili powder, cumin, garlic powder, salt, and pepper. Scramble eggs in a pan until cooked through.
- While the eggs are cooking, prepare the lime sour cream by mixing sour cream with lime juice in a small bowl.
- In a bowl, combine scrambled eggs, black beans, spinach, mini bell peppers, and cheddar cheese.
- Top with a dollop of lime sour cream and diced avocado.
- Serve immediately.
