Spicy Korean Potato and Carrot Pancakes

  1. Grate potatoes and carrots using a box grater or food processor.
  2. In a large bowl, combine grated potatoes, grated carrots, thinly sliced green onion, gochujang, soy sauce, flour, and egg. Mix well to combine.
  3. Heat vegetable oil in a large skillet over medium heat.
  4. Drop spoonfuls of the potato mixture into the skillet, flattening slightly to form pancakes.
  5. Cook until golden brown and crispy on both sides, about 3-4 minutes per side. Adjust heat as necessary to prevent burning.
  6. Brush the cooked pancakes with sesame oil for added flavor.
  7. Serve hot, garnished with sesame seeds. These are great with a dipping sauce made from soy sauce, rice vinegar, and a pinch of gochugaru (Korean chili flakes).
