Spicy Korean Potato and Carrot Pancakes
Savory Korean pancakes featuring grated potatoes, carrots, and a spicy kick from gochujang.
Ingredients
- 1 lb Potatoes
- 1 large Carrots
- 2-3, thinly sliced Green onion
- 1 tbsp Gochujang (Korean chili paste)
- 1 tbsp Soy sauce
- 1/4 cup All-purpose flour
- 1 large Egg
- 2-3 tbsp Vegetable oil
- 1 tsp Sesame oil
- To taste Salt
- For garnish Sesame seeds
Instructions
- Grate potatoes and carrots using a box grater or food processor.
- In a large bowl, combine grated potatoes, grated carrots, thinly sliced green onion, gochujang, soy sauce, flour, and egg. Mix well to combine.
- Heat vegetable oil in a large skillet over medium heat.
- Drop spoonfuls of the potato mixture into the skillet, flattening slightly to form pancakes.
- Cook until golden brown and crispy on both sides, about 3-4 minutes per side. Adjust heat as necessary to prevent burning.
- Brush the cooked pancakes with sesame oil for added flavor.
- Serve hot, garnished with sesame seeds. These are great with a dipping sauce made from soy sauce, rice vinegar, and a pinch of gochugaru (Korean chili flakes).
