Spicy Gochujang Chicken and Vegetable Stir-Fry (Korean Dinner)
A flavorful and high-protein stir-fry with chicken thighs, gochujang sauce, and lots of veggies.
Ingredients
- 1.5 lb Boneless Skinless Chicken Thighs
- 2 cups Broccoli Florets
- 1, sliced Green Bell Pepper
- 2, sliced Carrots
- 1, sliced Onion
- 2 tbsp Gochujang (Korean chili paste)
- 2 tbsp Soy Sauce
- 3 cloves, minced Garlic
- 1 tsp, minced Ginger
- 1 tbsp Sesame Oil
- 3 cups Cooked Rice
- 1 tsp Sriracha Hot Chili Sauce
Instructions
- Cut chicken thighs into bite-sized pieces. Marinate with gochujang, soy sauce, garlic, ginger, and sesame oil for at least 15 minutes.
- Heat a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until browned.
- Add broccoli florets, sliced bell pepper, carrots, and onion. Stir-fry until vegetables are tender-crisp.
- Stir in sriracha for an extra kick.
- Serve hot over cooked rice.
