  1. Preheat oven to 220°C (425°F).
  2. Dice potatoes into small, even pieces for faster roasting. Thinly slice onions. Mince garlic.
  3. Toss potatoes with 1 tbsp olive oil, chili flakes, smoked paprika, salt, and pepper.
  4. Roast potatoes for 25 minutes, flipping halfway through, until golden and crispy.
  5. While potatoes roast, sauté onions in remaining olive oil until deeply caramelized, about 10-15 minutes. Add garlic in the last minute to avoid burning.
  6. Warm the naan bread lightly.
  7. Top naan bread with the caramelized onions and garlic, then the roasted potatoes.
  8. Sprinkle with fresh cilantro and a squeeze of lemon juice before serving.
