Spiced Chickpea and Potato Wraps with Yogurt-Mint Sauce
Flavorful Indian-inspired wraps filled with spiced chickpeas, potatoes, and a cooling yogurt-mint sauce for a refreshing twist.
Ingredients
- 1 can (540 mL), drained and rinsed Canned Chickpeas
- 2 medium, peeled and diced Russet Potatoes
- 1 medium, finely chopped Onion
- 6 7" Tortillas
- 1.5 tsp Garam Masala
- 1 tsp Turmeric
- 1 tsp Cumin
- 1/4 cup Sour Cream
- 1, juiced Limes
- 3 cloves, minced Garlic
- 2 tbsp, chopped Fresh Mint
- 2 tbsp Vegetable Oil
- 1 small, finely chopped (optional) Green Chili
Instructions
- Heat vegetable oil in a large skillet over medium heat. Add onion and garlic, cook until golden brown, about 5 minutes.
- Add diced potatoes, garam masala, turmeric, and cumin. Cook, stirring occasionally, until potatoes are tender and slightly browned, about 10-12 minutes.
- Add chickpeas and green chili (if using), cook for another 5 minutes, stirring frequently.
- In a small bowl, mix sour cream with lime juice and fresh mint to make the yogurt-mint sauce.
- Warm tortillas in a dry skillet or microwave.
- Fill each tortilla with the chickpea and potato mixture, top with yogurt-mint sauce. Serve immediately.
