  1. Heat olive oil in a large skillet over medium heat.
  2. Add Italian sausage (casings removed) and cook, breaking it apart with a spoon, until browned.
  3. Add diced onion and minced garlic, cook until fragrant, about 2 minutes.
  4. Stir in tomato passata, drained canned mushrooms, dried oregano, red pepper flakes (if using), salt, and pepper.
  5. Bring to a simmer, then add the pasta. Add about 2 cups of water, ensuring the pasta is mostly submerged.
  6. Cover and cook until pasta is tender and most of the liquid is absorbed, about 15-20 minutes. Stir occasionally to prevent sticking.
  7. If the sauce is too thick, add a little more water. If it's too thin, cook uncovered for a few more minutes.
  8. Serve hot, garnished with fresh basil and grated Parmesan cheese if desired.
