Spanakopita (Greek Spinach Pie)
A classic Greek pie with flaky phyllo dough filled with spinach and feta cheese.
Ingredients
- 1 package, thawed Phyllo dough
- 2 cups, chopped Bunch Spinach
- 1 cup, crumbled Feta cheese
- 2 tbsp, softened Cream Cheese
- 1/2 medium, diced Farmer's Market Yellow Onions
- 2 large Eggs
- 1/2 cup, melted Butter
- 2 tbsp Olive oil
- 1/4 tsp Salt
- 1/8 tsp Black pepper
- Pinch Nutmeg
Instructions
- Preheat oven to 350°F (175°C).
- Sauté onions in olive oil until softened. Add spinach and cook until wilted. Squeeze out excess moisture from the spinach to prevent a soggy filling.
- In a bowl, combine spinach mixture with feta, cream cheese, eggs, salt, pepper, and a pinch of nutmeg. The nutmeg adds warmth and depth to the filling.
- Layer phyllo dough in a baking dish, brushing each layer with melted butter. Work quickly to prevent the phyllo dough from drying out.
- Pour filling into the dish and top with more phyllo dough layers, brushing each layer with butter.
- Bake for 45 minutes, or until golden brown and flaky.
