Ingredients
- 340 g (peeled and deveined) Cooked or Raw Shrimp
- 2 medium (various colors, sliced) Bell Peppers
- 1 medium (sliced) Onions
- 1 tsp Cumin
- 1 tsp Chili Powder
- 1/2 tsp Garlic Powder
- 2 tbsp Olive Oil
- 6 (flour or corn) Tortillas
- 1 (cut into wedges) Lime
- 1/4 cup (chopped, for garnish) Cilantro
- 1/2 cup Salsa
- 1/4 cup Sour Cream
- 1 medium (sliced) Avocado
Instructions
- Slice bell peppers and onions into strips.
- In a small bowl, combine cumin, chili powder, and garlic powder.
- Heat olive oil in a large skillet or cast-iron pan over medium-high heat.
- Add bell peppers and onions, cook until tender-crisp and slightly charred, about 5-7 minutes.
- Add shrimp and spice mixture, cook until shrimp is pink and cooked through, about 3-5 minutes. Be careful not to overcook the shrimp.
- Warm tortillas in a skillet, microwave, or oven.
- Fill each tortilla with shrimp, bell peppers, and onions.
- Top with salsa, sour cream, sliced avocado, a squeeze of lime juice, and chopped cilantro.
- Serve immediately.
