Sausage and Peppers Pasta (Italian)

  1. Cook penne pasta according to package directions until al dente. Reserve 1/2 cup of pasta water before draining.
  2. While pasta is cooking, heat olive oil in a large skillet over medium heat.
  3. Remove sausage from casings (if using) and crumble into the skillet. Cook until browned, breaking up the sausage with a spoon.
  4. Add sliced yellow onion and cook until softened, about 5 minutes.
  5. Add sliced red and yellow bell peppers and cook until tender-crisp, about 5 minutes.
  6. Stir in minced garlic and Italian seasoning. Cook for 1 minute until fragrant.
  7. Pour pasta sauce over the sausage and vegetables. Bring to a simmer and cook for 10 minutes, stirring occasionally.
  8. Add drained pasta to the skillet with the sauce. Toss to combine, adding reserved pasta water as needed to adjust consistency.
  9. Season with salt and black pepper to taste.
  10. Stir in fresh basil and serve immediately.
