Sausage and Bean Soup (Canadian Style)
A hearty and comforting Canadian-inspired soup filled with smoked sausages and mixed beans.
Ingredients
- 6 sausages, sliced Smoked Sausages
- 2 cans (398ml), drained and rinsed Mixed Beans
- 1 cup, diced Carrots
- 1/2 cup, diced Celery
- 1/2 cup, diced Onion
- 4 cups Chicken Broth
- 1/2 tsp Dried Thyme
- 1 tbsp Olive Oil
- 1 Bay Leaf
- To taste Salt and Pepper
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add sliced sausages and cook until browned, about 5 minutes. Remove sausages and set aside.
- Add diced carrots, celery, and onion to the pot. Cook until softened, about 5-7 minutes.
- Pour in chicken broth and bring to a simmer. Add mixed beans, dried thyme, and bay leaf. Season with salt and pepper to taste.
- Return browned sausages to the pot. Reduce heat to low, cover, and simmer for 25-30 minutes, allowing flavors to meld.
- Remove bay leaf before serving. Serve hot with crusty bread, if desired.
