  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add sliced sausages and cook until browned, about 5 minutes. Remove sausages and set aside.
  3. Add diced carrots, celery, and onion to the pot. Cook until softened, about 5-7 minutes.
  4. Pour in chicken broth and bring to a simmer. Add mixed beans, dried thyme, and bay leaf. Season with salt and pepper to taste.
  5. Return browned sausages to the pot. Reduce heat to low, cover, and simmer for 25-30 minutes, allowing flavors to meld.
  6. Remove bay leaf before serving. Serve hot with crusty bread, if desired.
