  1. Preheat oven to 425°F (220°C).
  2. Dice the potatoes and mince 2 cloves of garlic.
  3. Toss potatoes and garlic with 1 tbsp olive oil, salt, and pepper.
  4. Roast for 25-30 minutes, or until potatoes are crispy and golden, flipping halfway through.
  5. While potatoes roast, prepare lemon-tahini dressing: In a small bowl, whisk together tahini, lemon juice, 1 tbsp olive oil, garlic powder, salt, and pepper. Add water, 1 tsp at a time, until desired consistency is reached.
  6. Warm the whole wheat tortilla.
  7. Spread hummus on the tortilla.
  8. Add roasted potatoes, fresh arugula, and drizzle with lemon-tahini dressing.
  9. Wrap tightly and serve immediately.
