Roasted Potato and Garlic Hummus Wrap
A flavorful wrap filled with roasted garlic hummus, crispy diced roasted potatoes, peppery fresh arugula, and a tangy lemon-tahini dressing.
Ingredients
- 1/2 medium (red potatoes recommended) Potatoes
- 3 cloves Garlic
- 1/4 container (57-70g) Hummus
- 1 cup Arugula
- 1 Whole wheat tortilla
- 2 tbsp Olive oil
- 1 tbsp Tahini
- 1 tbsp Lemon juice
- 1/4 tsp Garlic powder
- to taste Salt
- to taste Black pepper
Instructions
- Preheat oven to 425°F (220°C).
- Dice the potatoes and mince 2 cloves of garlic.
- Toss potatoes and garlic with 1 tbsp olive oil, salt, and pepper.
- Roast for 25-30 minutes, or until potatoes are crispy and golden, flipping halfway through.
- While potatoes roast, prepare lemon-tahini dressing: In a small bowl, whisk together tahini, lemon juice, 1 tbsp olive oil, garlic powder, salt, and pepper. Add water, 1 tsp at a time, until desired consistency is reached.
- Warm the whole wheat tortilla.
- Spread hummus on the tortilla.
- Add roasted potatoes, fresh arugula, and drizzle with lemon-tahini dressing.
- Wrap tightly and serve immediately.
