Roasted Chicken and Potato Medley
A simple and satisfying dinner with roasted chicken, potatoes, and herbs.
Ingredients
- 1 small chicken (approx. 1.5 kg) Whole Chicken
- 1.5 lb, halved Potatoes
- 1 medium, chopped Carrots
- 2 tbsp Olive Oil
- 2 sprigs Rosemary
- 1/2 tsp Salt
- 1/4 tsp Black pepper
- 2 cloves, minced Garlic
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss potatoes and carrots with olive oil, rosemary, minced garlic, salt, and pepper.
- Place vegetables in a roasting pan.
- Pat the chicken dry with paper towels.
- Place chicken on top of the vegetables.
- Roast for 45-60 minutes, or until chicken is cooked through (165°F/74°C internal temperature) and vegetables are tender.
- Let rest for 10 minutes before serving.
