  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss potatoes and carrots with olive oil, rosemary, minced garlic, salt, and pepper.
  3. Place vegetables in a roasting pan.
  4. Pat the chicken dry with paper towels.
  5. Place chicken on top of the vegetables.
  6. Roast for 45-60 minutes, or until chicken is cooked through (165°F/74°C internal temperature) and vegetables are tender.
  7. Let rest for 10 minutes before serving.
