Radish & Cucumber Spring Salad
Crisp and vibrant salad with radishes, cucumbers, and a lemon-herb vinaigrette, a refreshing spring treat.
Ingredients
- 1 medium, thinly sliced Seedless Cucumbers
- 1 cup, thinly sliced Radishes
- 1/4 cup, chopped Fresh parsley
- 2 tbsp, chopped Fresh chives
- 2 tbsp, fresh Lemon juice
- 2 tbsp, extra virgin Olive oil
- 1/4 tsp Salt
- 1/8 tsp Black pepper
Instructions
- Combine sliced cucumbers and radishes in a bowl. Thinly slicing allows the flavors to meld better.
- Whisk together parsley, chives, lemon juice, olive oil, salt, and pepper.
- Pour dressing over the salad and toss gently. Chill for 10-15 minutes before serving to allow flavors to develop.
