  1. Dice potatoes into small cubes. Dice onions. Mince garlic.
  2. Heat olive oil in a pan over medium heat. Add potatoes and cook, stirring occasionally, until they begin to soften, about 8-10 minutes.
  3. Add onions and garlic to the pan with the potatoes. Cook until potatoes are tender and lightly browned, and onions are caramelized, about 7-10 minutes.
  4. Stir in taco seasoning and a squeeze of lime juice. Cook for another minute to allow the flavors to meld.
  5. Warm tortillas in a dry pan or microwave.
  6. Fill tortillas with potato mixture.
  7. Top with salsa, diced avocado, and chopped cilantro.
  8. Serve hot with tortilla chips.
