Potato & Onion Vegan Tacos
Savory potato and onion filling in a taco with fresh toppings.
Ingredients
- 1 medium Potatoes
- 1/2 medium Onion
- 2 cloves Garlic
- 3 Tortilla Chips
- 2 tbsp Olive oil
- 1.5 tsp Taco seasoning
- 1 tsp Lime juice
- 2 tbsp Salsa
- 1/4 Avocado
- 1 tbsp Cilantro
Instructions
- Dice potatoes into small cubes. Dice onions. Mince garlic.
- Heat olive oil in a pan over medium heat. Add potatoes and cook, stirring occasionally, until they begin to soften, about 8-10 minutes.
- Add onions and garlic to the pan with the potatoes. Cook until potatoes are tender and lightly browned, and onions are caramelized, about 7-10 minutes.
- Stir in taco seasoning and a squeeze of lime juice. Cook for another minute to allow the flavors to meld.
- Warm tortillas in a dry pan or microwave.
- Fill tortillas with potato mixture.
- Top with salsa, diced avocado, and chopped cilantro.
- Serve hot with tortilla chips.
