Potato and Onion Pizza Bites
Mini vegetarian pizzas featuring a crispy potato crust topped with caramelized onions, garlic, and melted cheese.
Ingredients
- 1 large Potatoes
- 1/2 medium, thinly sliced Onions
- 3 cloves, minced Garlic
- 2 tbsp Olive oil
- 2 slices Processed Cheese Slices
- 1/4 cup Pasta sauce
- 1/2 tsp Dried oregano
- 1/4 tsp Dried basil
- Pinch (optional) Red pepper flakes
- to taste Salt
- to taste Black pepper
Instructions
- Preheat oven to 425°F (220°C).
- Grate the potato using a box grater. Place in a clean kitchen towel and squeeze out as much moisture as possible. This ensures a crispy crust.
- In a bowl, mix grated potato with 1 tbsp olive oil, salt, and pepper.
- Press potato mixture firmly into mini pizza shapes (about 4-5 inches in diameter) on a baking sheet lined with parchment paper.
- Bake for 20 minutes, or until lightly golden and crispy. Watch carefully to prevent burning.
- While the potato crust is baking, heat 1 tbsp olive oil in a skillet over medium heat. Add the sliced onions and cook until caramelized, about 15-20 minutes, stirring occasionally. Add the minced garlic during the last minute of cooking and stir until fragrant.
- Remove the potato crusts from the oven.
- Spread the pasta sauce evenly over the potato crusts.
- Top with caramelized onions and garlic, processed cheese slices, dried oregano, dried basil, and a pinch of red pepper flakes (if using).
- Bake for another 5-10 minutes, or until the cheese is melted and bubbly. Broil for the last minute to achieve a golden crust.
- Let cool slightly before serving.
