  1. Preheat oven to 425°F (220°C).
  2. Grate the potato using a box grater. Place in a clean kitchen towel and squeeze out as much moisture as possible. This ensures a crispy crust.
  3. In a bowl, mix grated potato with 1 tbsp olive oil, salt, and pepper.
  4. Press potato mixture firmly into mini pizza shapes (about 4-5 inches in diameter) on a baking sheet lined with parchment paper.
  5. Bake for 20 minutes, or until lightly golden and crispy. Watch carefully to prevent burning.
  6. While the potato crust is baking, heat 1 tbsp olive oil in a skillet over medium heat. Add the sliced onions and cook until caramelized, about 15-20 minutes, stirring occasionally. Add the minced garlic during the last minute of cooking and stir until fragrant.
  7. Remove the potato crusts from the oven.
  8. Spread the pasta sauce evenly over the potato crusts.
  9. Top with caramelized onions and garlic, processed cheese slices, dried oregano, dried basil, and a pinch of red pepper flakes (if using).
  10. Bake for another 5-10 minutes, or until the cheese is melted and bubbly. Broil for the last minute to achieve a golden crust.
  11. Let cool slightly before serving.
