Potato and Onion Frittata Slices
Individual frittata slices filled with sautéed potatoes, onions, and garlic, baked until golden with a touch of nutmeg for an easy grab-and-go lunch.
Ingredients
- 1 medium Potatoes
- 1/4 medium Onion
- 1 clove Garlic
- 2 large Eggs
- 2 tbsp Milk
- 1/4 cup Cheddar cheese, shredded
- Pinch Nutmeg
- to taste Salt
- to taste Black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Dice the potato and onion. Mince the garlic.
- Sauté the potato and onion in a pan over medium heat until softened, about 8-10 minutes. Add garlic for the last minute.
- In a bowl, whisk together eggs, milk, salt, pepper and a pinch of nutmeg.
- Stir in the sautéed vegetables and cheese.
- Pour the mixture into a greased muffin tin (for individual servings).
- Bake for 20-25 minutes, or until golden brown and set. Ensure the internal temperature reaches 160°F (71°C).
- Let cool slightly before serving.
