  1. Dice potatoes, carrots, and onion. Slice chorizo into 1/4-inch thick rounds. Mince garlic.
  2. Heat olive oil in a large skillet over medium heat. Add chorizo and cook until browned and crispy, about 5-7 minutes. Remove chorizo from skillet and set aside, reserving the rendered fat in the pan.
  3. Add yellow onion to the skillet with the chorizo fat and cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
  4. Add potatoes and carrots to the skillet and cook, stirring occasionally, until tender and golden brown, about 20-25 minutes. If the pan gets too dry, add a tablespoon of olive oil.
  5. Stir in smoked paprika, salt, and freshly ground black pepper. Return chorizo to the skillet and heat through.
  6. Garnish with fresh parsley and serve hot.
