Potato and Chorizo Spanish Hash
A flavorful Spanish-inspired hash with potatoes, chorizo, and a touch of smoked paprika.
Ingredients
- 1.5 lb Potatoes
- 2 medium Carrots
- 8 oz Spanish chorizo sausage
- 1 medium Yellow onion
- 1 tsp Smoked paprika
- 2 cloves, minced Garlic
- 2 tbsp Olive oil
- 2 tbsp, chopped Fresh parsley
- To taste Salt and freshly ground black pepper
Instructions
- Dice potatoes, carrots, and onion. Slice chorizo into 1/4-inch thick rounds. Mince garlic.
- Heat olive oil in a large skillet over medium heat. Add chorizo and cook until browned and crispy, about 5-7 minutes. Remove chorizo from skillet and set aside, reserving the rendered fat in the pan.
- Add yellow onion to the skillet with the chorizo fat and cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
- Add potatoes and carrots to the skillet and cook, stirring occasionally, until tender and golden brown, about 20-25 minutes. If the pan gets too dry, add a tablespoon of olive oil.
- Stir in smoked paprika, salt, and freshly ground black pepper. Return chorizo to the skillet and heat through.
- Garnish with fresh parsley and serve hot.
