Pork and Pineapple Tacos with Slaw
Delicious and tangy Mexican-inspired tacos with marinated pork, pineapple, and a fresh slaw.
Ingredients
- 1.5 lb, boneless cut into cubes Pork Loin Back Ribs, Family Size
- 6 Tortillas
- 1/2, diced Pineapple
- 1 cup, shredded Cabbage
- 1/2 cup, shredded Carrots
- 2 tbsp Mayonnaise
- 1 tbsp Lime Juice
- 2 tbsp Taco or Fajita Seasonings
- 1/2 tsp Chili Powder
- 1/4 tsp Cumin
Instructions
- In a bowl, toss the pork cubes with taco seasoning, chili powder, and cumin.
- Heat a tablespoon of oil in a skillet over medium-high heat and cook the pork until browned and cooked through, about 8-10 minutes.
- Add the diced pineapple to the skillet and cook for another 5 minutes, stirring occasionally, until slightly caramelized.
- In a separate bowl, combine shredded cabbage, carrots, mayonnaise, and lime juice to make the slaw. Season with salt and pepper to taste.
- Warm tortillas. Fill each tortilla with the pork and pineapple mixture and top with the slaw. Serve immediately, with additional lime wedges if desired.
