  1. Cut pork into thin strips. In a bowl, mix pork with 1 tbsp soy sauce and 1 tbsp cornstarch. Marinate for at least 10 minutes.
  2. Heat vegetable oil in a wok or large skillet over high heat.
  3. Add egg noodles and cook until golden brown and crispy. Remove and set aside.
  4. Add sesame oil to the wok, then add garlic and ginger and cook until fragrant (about 30 seconds).
  5. Add pork and stir-fry until browned and cooked through (internal temperature of 145°F or 63°C).
  6. Add green cabbage and stir-fry until tender-crisp.
  7. Add remaining soy sauce, brown sugar, and red pepper flakes (if using) and stir-fry to combine.
  8. Return noodles to the wok and toss to coat with the sauce.
  9. Serve immediately.
