One-Pot Mexican Beef and Rice Bowls
A simple one-pot meal with seasoned ground beef, rice, beans, and tomatoes, perfect for building custom bowls with your favorite toppings.
Ingredients
- 1 lb Lean Ground Beef
- 1/2 medium Onion
- 2 cloves Garlic
- 2 medium Tomatoes on the Vine
- 1 cup (dry) Basmati Rice
- 1 can (398ml) Refried Beans
- 1/2 cup Salsa
- 2 tbsp Taco Seasoning
- 2 cups Water or Beef Broth
- 1 tsp Cooking Oil
- To taste Salt and Pepper
- 1 cup (for serving) Shredded Lettuce
- 1/2 cup (for serving) Shredded Cheese
- 1/4 cup (for serving) Sour Cream
- For serving (optional) Guacamole or Avocado
Instructions
- Finely dice the onion and mince the garlic. Dice the tomatoes.
- Heat oil in a large pot or deep pan over medium-high heat.
- Add ground beef and cook, breaking it up with a spoon, until fully browned. Drain excess fat.
- Add diced onion and minced garlic and cook until softened and fragrant, about 3-4 minutes.
- Stir in diced tomatoes and taco seasoning, mixing well to coat the beef and vegetables.
- Add uncooked rice and water or broth, stirring to ensure the rice is evenly distributed.
- Bring the mixture to a boil, then immediately reduce heat to low, cover tightly, and simmer for 15-20 minutes, or until the rice has absorbed the liquid and is cooked through.
- While the rice is cooking, gently heat the refried beans in a small saucepan over low heat, stirring occasionally.
- Once the rice is cooked, remove from heat and let it steam, covered, for 5 minutes.
- Fluff the beef and rice mixture with a fork.
- Serve the beef and rice mixture in bowls. Spoon warm refried beans alongside.
- Offer shredded lettuce, shredded cheese, sour cream, salsa, and guacamole or avocado as toppings.
