One-Pot Creamy Tomato and Spinach Pasta (Italian)
An easy and comforting one-pot pasta dish with creamy tomato sauce and spinach.
Ingredients
- 230 g Pasta
- 680 mL Tomato Sauce
- 4 cups Vegetable Broth (low sodium)
- 1/2 cup Heavy Cream (or half-and-half for a lighter option)
- 5 oz Fresh Spinach
- 2 cloves Garlic, minced
- 1 tsp Italian Seasoning
- 1/4 cup Shredded Parmesan (freshly grated is best)
- Pinch Red Pepper Flakes (optional)
Instructions
- In a large pot or Dutch oven, combine pasta, tomato sauce, vegetable broth, garlic, and Italian seasoning.
- Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until pasta is cooked and liquid is absorbed, stirring occasionally. If the sauce becomes too thick before the pasta is cooked, add a little more broth.
- Stir in heavy cream and spinach. Cook until spinach is wilted.
- Season with salt and pepper to taste. Add a pinch of red pepper flakes for a little heat, if desired.
- Sprinkle with Parmesan cheese before serving. Serve immediately for best texture.
