One-Pot Creamy Tomato and Spinach Pasta (Italian)

  1. In a large pot or Dutch oven, combine pasta, tomato sauce, vegetable broth, garlic, and Italian seasoning.
  2. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until pasta is cooked and liquid is absorbed, stirring occasionally. If the sauce becomes too thick before the pasta is cooked, add a little more broth.
  3. Stir in heavy cream and spinach. Cook until spinach is wilted.
  4. Season with salt and pepper to taste. Add a pinch of red pepper flakes for a little heat, if desired.
  5. Sprinkle with Parmesan cheese before serving. Serve immediately for best texture.
