One-Pan Mexican Quinoa Bowl
A nutritious and easy one-pan Mexican bowl with seasoned quinoa, black beans, corn, and a zesty lime dressing.
Ingredients
- 1.5 cups Quinoa
- 1 can (398ml), drained and rinsed Black Beans
- 1 cup Corn (Frozen or Canned)
- 3 cups Vegetable Broth (Low Sodium)
- 2 tsp Chili Powder
- 1 tsp Cumin
- 1/2 tsp Smoked Paprika
- 1-2, juiced (adjust to taste) Lime
- 1/4 cup, chopped Cilantro
- 1, diced Avocado
- 1/4 cup, diced Red Onion
Instructions
- In a large pot, combine quinoa, vegetable broth, chili powder, cumin, and smoked paprika.
- Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until quinoa is cooked and broth is absorbed.
- Stir in black beans and corn.
- Remove from heat and fluff with a fork. Stir in lime juice and cilantro. Taste and adjust seasonings as needed.
- Serve warm, topped with diced avocado and diced red onion.
