  1. In a large pot, combine quinoa, vegetable broth, chili powder, cumin, and smoked paprika.
  2. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until quinoa is cooked and broth is absorbed.
  3. Stir in black beans and corn.
  4. Remove from heat and fluff with a fork. Stir in lime juice and cilantro. Taste and adjust seasonings as needed.
  5. Serve warm, topped with diced avocado and diced red onion.
