Mushroom and Cheese Quesadillas (Mexican)
Simple and satisfying quesadillas with sautéed mushrooms and melted cheese.
Ingredients
- 250g, sliced Mushrooms
- 6 small flour tortillas Tortillas
- 1.5 cups, Monterey Jack, or cheddar Shredded cheese
- 1 tbsp Olive oil
- 1/4 tsp Garlic powder
- 1/4 tsp Chili powder
- To taste Salt
- To taste Black pepper, freshly ground
Instructions
- Heat olive oil in a skillet over medium heat. Add sliced mushrooms and sauté until softened, about 5-7 minutes.
- Season with garlic powder, chili powder, salt, and freshly ground black pepper to taste.
- Lay tortillas flat and sprinkle shredded cheese evenly on one half of each tortilla.
- Top with sautéed mushrooms.
- Fold the other half of the tortilla over the filling.
- Cook in a dry pan or on a griddle over medium heat until golden brown and cheese is melted, about 2-3 minutes per side.
- Cut into wedges and serve hot, with salsa or sour cream if desired.
