Mushroom and Cheese Quesadillas (Mexican)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add sliced mushrooms and sauté until softened, about 5-7 minutes.
  2. Season with garlic powder, chili powder, salt, and freshly ground black pepper to taste.
  3. Lay tortillas flat and sprinkle shredded cheese evenly on one half of each tortilla.
  4. Top with sautéed mushrooms.
  5. Fold the other half of the tortilla over the filling.
  6. Cook in a dry pan or on a griddle over medium heat until golden brown and cheese is melted, about 2-3 minutes per side.
  7. Cut into wedges and serve hot, with salsa or sour cream if desired.
