Miso Ramen with Pork and Bok Choy

  1. Prepare soft-boiled eggs: Bring a pot of water to a boil, gently lower eggs and cook for 6-7 minutes. Transfer to an ice bath to stop cooking. Peel carefully.
  2. Cook ramen noodles according to package instructions. Drain and set aside.
  3. In a large pot, bring broth to a simmer. Stir in miso paste until dissolved. Add minced garlic and grated ginger for added flavor.
  4. Pan-fry pork belly until crispy. Drain excess fat.
  5. Add bok choy to the simmering broth and cook until tender. Season with tamari.
  6. Assemble ramen bowls: Place noodles in each bowl. Pour in the miso broth with bok choy. Top with crispy pork belly, soft-boiled egg (halved), and sliced green onions. Serve immediately.
