Miso Ramen with Pork and Bok Choy
A comforting bowl of miso ramen with tender pork belly, bok choy, and a soft-boiled egg.
Ingredients
- 3 bundles (fresh or dried) Ramen noodles
- 0.75 lb, sliced Pork belly
- 1 tbsp San-J Tamari
- 1.5 cup, chopped Bok choy
- 3 Large eggs
- 3 tbsp (red or white) Miso paste
- 6 cups Campbell's Broth
- 2, sliced Green onions
- 2 cloves, minced Garlic
- 1 tsp, grated Ginger
Instructions
- Prepare soft-boiled eggs: Bring a pot of water to a boil, gently lower eggs and cook for 6-7 minutes. Transfer to an ice bath to stop cooking. Peel carefully.
- Cook ramen noodles according to package instructions. Drain and set aside.
- In a large pot, bring broth to a simmer. Stir in miso paste until dissolved. Add minced garlic and grated ginger for added flavor.
- Pan-fry pork belly until crispy. Drain excess fat.
- Add bok choy to the simmering broth and cook until tender. Season with tamari.
- Assemble ramen bowls: Place noodles in each bowl. Pour in the miso broth with bok choy. Top with crispy pork belly, soft-boiled egg (halved), and sliced green onions. Serve immediately.
