Mini Egg Ice Cream Sandwiches

A delightful lunch of ice cream sandwiches made with cookies and rolled in crushed Mini Eggs.

Ingredients

• 6 Cookies
• 1/2 cup, crushed Cadbury Mini Eggs
• 1 pint Ice Cream
• 1/4 cup Sprinkles

Instructions

1. Soften ice cream slightly.
2. Spread a thick layer of ice cream between two cookies to form a sandwich.
3. Roll the edges of the ice cream sandwich in crushed Cadbury Mini Eggs.
4. Roll the edges of the ice cream sandwich in sprinkles
5. Freeze for at least 30 minutes before serving.
