Mini Chocolate Lava Cakes with Berry Coulis
Individual chocolate lava cakes with a molten center, topped with a vibrant berry coulis, offering a rich and fruity delight.
Ingredients
- 150 g Sweet Milk Chocolate
- 75 g Unsalted Butter
- 2 Large Eggs
- 50 g Granulated Sugar
- 30 g All-Purpose Flour
- 200 g Mixed Berries (fresh or frozen)
- 1 tbsp Lemon Juice
- 1/4 tsp Espresso Powder
Instructions
- Preheat oven to 425°F (220°C). Generously butter and dust with cocoa powder 3 ramekins (6-ounce size).
- Melt chocolate and butter together in a heatproof bowl over simmering water, stirring until smooth. Remove from heat and stir in espresso powder.
- In a separate bowl, whisk eggs and sugar vigorously until pale and slightly thickened, about 2 minutes.
- Gently fold the melted chocolate mixture into the egg mixture in thirds, being careful not to deflate the eggs.
- Add flour and mix until just combined. Do not overmix.
- Divide batter evenly among the prepared ramekins.
- Bake for 12-15 minutes, or until the edges are set but the center is still soft and slightly wobbly. Start checking at 12 minutes.
- While the cakes bake, prepare the berry coulis by combining mixed berries and lemon juice in a saucepan. Simmer over medium heat until the berries soften and release their juices, about 5-7 minutes. Blend until smooth and strain to remove seeds for a silky texture.
- Let cool in ramekins for 1 minute before inverting onto plates. Drizzle generously with berry coulis and serve immediately. A dusting of powdered sugar is optional.
