  2. Melt chocolate and butter together in a heatproof bowl over simmering water, stirring until smooth. Remove from heat and stir in espresso powder.
  3. In a separate bowl, whisk eggs and sugar vigorously until pale and slightly thickened, about 2 minutes.
  4. Gently fold the melted chocolate mixture into the egg mixture in thirds, being careful not to deflate the eggs.
  5. Add flour and mix until just combined. Do not overmix.
  6. Divide batter evenly among the prepared ramekins.
  7. Bake for 12-15 minutes, or until the edges are set but the center is still soft and slightly wobbly. Start checking at 12 minutes.
  8. While the cakes bake, prepare the berry coulis by combining mixed berries and lemon juice in a saucepan. Simmer over medium heat until the berries soften and release their juices, about 5-7 minutes. Blend until smooth and strain to remove seeds for a silky texture.
  9. Let cool in ramekins for 1 minute before inverting onto plates. Drizzle generously with berry coulis and serve immediately. A dusting of powdered sugar is optional.
