Mini Bell Pepper and Egg Breakfast Burrito Bowls
A deconstructed vegetarian breakfast burrito bowl with scrambled eggs, mini bell peppers, spinach, and Mexican spices.
Ingredients
- 3 large Eggs
- 1 cup, chopped Mini Bell Peppers
- 1 cup, chopped Spinach
- 1/2 cup, cooked Black Beans
- 2 tbsp, your favorite heat level Salsa
- 1/2, diced Avocado
- 1/4 cup Shredded Cheddar Cheese
- 1/2 tsp Chili Powder
- 1/4 tsp Cumin
- 1 tsp Lime Juice
- 1 clove, minced Garlic
Instructions
- In a bowl, whisk eggs with lime juice, salt, pepper, chili powder, and cumin.
- Sauté minced garlic in a pan over medium heat until fragrant.
- Add mini bell peppers to the pan and cook until slightly softened.
- Add spinach to the pan and cook until wilted.
- Pour in the egg mixture and scramble until cooked through.
- Divide the scrambled egg mixture between two bowls.
- Top with black beans, salsa, avocado, and shredded cheddar cheese.
- Serve immediately.
