  3. Add mini bell peppers to the pan and cook until slightly softened.
  4. Add spinach to the pan and cook until wilted.
  5. Pour in the egg mixture and scramble until cooked through.
  6. Divide the scrambled egg mixture between two bowls.
  7. Top with black beans, salsa, avocado, and shredded cheddar cheese.
  8. Serve immediately.
