Mexican Street Corn Salad with Black Beans & Feta
A vibrant and flavorful Mexican-inspired salad with charred corn, black beans, feta cheese, and a zesty lime dressing.
Ingredients
- 2 cups Frozen corn kernels
- 1 can (15 oz), rinsed and drained Black beans, canned
- 1/2 cup, crumbled Feta Cheese
- 1/4 cup Red onion, finely chopped
- 1/4 cup Fresh Cilantro, chopped
- 2 tbsp Lime juice
- 2 tbsp Olive oil
- 1/2 tsp Chili powder
- 1/2 tsp Cumin
- 1/4 tsp Smoked paprika
- To taste Salt and black pepper
Instructions
- Heat a grill pan or large skillet over medium-high heat.
- Add frozen corn and cook, stirring occasionally, until charred and slightly caramelized, about 8-10 minutes. Remove from heat.
- In a large bowl, combine charred corn, black beans, red onion, and cilantro.
- In a small bowl, whisk together lime juice, olive oil, chili powder, cumin, smoked paprika, salt, and pepper.
- Pour dressing over the corn mixture and toss gently to combine.
- Top with crumbled feta cheese and serve immediately or chill for later.
