Mexican Street Corn Salad Jars

Ingredients
- 3 ears, husks removed Corn on the cob
- 3 tbsp Mayonnaise
- 1.5 tbsp fresh Lime juice
- 1 tsp Chili powder
- 1/4 tsp Smoked Paprika
- 2 tbsp chopped Cilantro
- 1/2 cup crumbled Cotija cheese
Instructions
- Grill corn over medium heat, turning occasionally, until kernels are lightly charred, about 8-10 minutes. Alternatively, boil corn until tender, about 6-8 minutes.
- Let corn cool slightly, then cut kernels off the cob.
- In a bowl, whisk mayonnaise, lime juice, chili powder, and smoked paprika.
- Stir in corn kernels, cilantro, and gently fold in most of the crumbled cotija cheese, reserving some for garnish.
- Divide the salad into jars, sprinkle with remaining cotija cheese, and seal for a convenient and delicious lunch on-the-go.
