Mexican Street Corn Salad (Esquites)
A vibrant and flavorful salad inspired by Mexican street corn, perfect as a side dish or light meal.
Ingredients
- 4 cups Corn kernels (fresh or frozen)
- 1/2 cup Red Onion, finely chopped
- 1 Jalapeño, seeded and minced
- 1/4 cup Fresh Cilantro, chopped
- 1/4 cup Mayonnaise
- 2 tbsp Lime Juice (freshly squeezed)
- 1/4 cup Cotija Cheese, crumbled (or feta)
- 1 tsp Chili Powder
- 1/4 tsp Garlic Powder
- 1/4 tsp Smoked Paprika
Instructions
- If using fresh corn, grill or roast it for enhanced flavor, then cut the kernels off the cob. If using frozen, thaw and drain.
- In a large bowl, combine corn kernels, red onion, jalapeño, and cilantro.
- In a small bowl, whisk together mayonnaise, lime juice, chili powder, garlic powder, and smoked paprika.
- Pour dressing over the corn mixture and toss gently to combine.
- Garnish with crumbled Cotija cheese (or feta) and an extra sprinkle of chili powder, if desired.
