Mexican Chorizo and Egg Scramble with Tortillas

Ingredients
- 1/2 lb Chorizo sausage
- 6 Large Eggs
- 1/2 cup chopped onion Onions
- 1 tbsp minced Jalapeno pepper (optional)
- 6 Tortillas
- To taste Cilantro
- 1/2 avocado Avocado, sliced (optional)
- To taste Salsa
Instructions
- Remove chorizo from casing and crumble it into a skillet.
- Cook over medium heat until browned.
- Add chopped onion and minced jalapeno (if using) and cook until softened.
- Whisk eggs and pour over the chorizo mixture.
- Scramble until eggs are cooked through.
- Warm tortillas.
- Serve the chorizo and egg scramble in warm tortillas, topped with cilantro, avocado slices (if using), and salsa.
