Mexican Beef and Bean Burrito Bowls

Ingredients
- 1.5 lb Ground Beef
- 1 medium Onion
- 2 can Bush's Best Beans
- 1.5 cups Rice
- 1 cup Salsa
- 1 medium Avocado
- 1/2 cup Sour Cream
- 2 tbsp Chili Powder
- 1 tbsp Cumin
- 1 tsp Smoked Paprika
- 2 tbsp Olive Oil
- 1 tsp Salt
- 1/2 tsp Black Pepper
- 1/4 cup Fresh Cilantro
- 1 Lime
Instructions
- Cook rice according to package directions. Fluff with a fork and set aside.
- Heat olive oil in a large skillet over medium heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain excess fat.
- Add diced onion to the skillet and cook until softened, about 5 minutes.
- Stir in chili powder, cumin, smoked paprika, salt, and black pepper. Cook for another minute until fragrant.
- Add beans and salsa to the skillet and stir to combine. Cook for 5-7 minutes, or until heated through.
- Divide cooked rice among bowls. Top with beef and bean mixture. Garnish with diced avocado, a dollop of sour cream, chopped cilantro, and a squeeze of lime juice.
- Serve immediately.
