Mediterranean Tomato Pasta with Broccoli & Feta
A flavorful Mediterranean pasta dish with tomatoes, broccoli, olives, and crumbled feta cheese.
Ingredients
- 250g Pasta
- 398ml Canned Tomatoes
- 1 cup Broccoli Florets
- 1/2 cup, chopped Mediterranean Olive Medley
- 100g, crumbled Feta
- 2 tbsp Olive Oil
- 2 cloves, minced Garlic
- 1 tsp Dried Oregano
- 1/4 cup, chopped Fresh Basil
- 1 tbsp Lemon Juice
- to taste Salt and Black Pepper
Instructions
- Cook pasta according to package directions until al dente. Reserve about 1/2 cup of pasta water before draining.
- Steam or blanch broccoli florets until tender-crisp.
- In a large skillet, heat olive oil over medium heat.
- Add garlic and sauté until fragrant.
- Add canned tomatoes, oregano, salt, and pepper. Simmer for 20 minutes, stirring occasionally, to allow the flavors to meld.
- Stir in cooked pasta, broccoli florets, and chopped olive medley.
- Toss gently to combine, adding a little of the reserved pasta water if needed to create a smooth sauce.
- Stir in lemon juice and fresh basil.
- Serve immediately, topped with crumbled feta cheese.
