Mediterranean Tomato & Broccoli Frittata
A Mediterranean-inspired frittata with tomatoes, broccoli, eggs, and cheese slices.
Ingredients
- 1 cup Broccoli florets
- 1/2 cup Canned diced tomatoes
- 6 Eggs
- 4 slices Cheese Slices
- 2 tbsp Olive oil
- 1 tsp Dried oregano
- 1 clove Garlic, minced
- To taste Salt and black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Steam or boil broccoli until tender-crisp. Pat dry to remove excess moisture.
- In a bowl, whisk eggs with salt, black pepper, and dried oregano.
- Heat olive oil in an oven-safe skillet over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.
- Add broccoli and diced tomatoes to the skillet and cook for 2 minutes.
- Pour egg mixture into the skillet, ensuring it distributes evenly over the vegetables.
- Arrange cheese slices over the top of the frittata.
- Cook on the stovetop for 5 minutes, then transfer to the oven.
- Bake for 18-23 minutes, or until set and lightly golden brown. Let cool slightly before slicing and serving.
