Mediterranean Mini Pepper & Spinach Egg Bake
A flavorful and easy-to-make Mediterranean egg bake packed with mini bell peppers, spinach, feta cheese, and herbs.
Ingredients
- 1 cup, chopped Mini Bell Peppers
- 2 cups, chopped Spinach
- 3 large Eggs
- 1/2 cup, crumbled Feta Cheese
- 2 cloves, minced Garlic
- 1 tsp Dried Oregano
- 1/2 tsp Dried Basil
- 1/4 tsp (optional) Red Pepper Flakes
- 1 tbsp Olive Oil
- to taste Salt
- to taste Black Pepper
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add minced garlic and red pepper flakes (if using) and cook until fragrant, about 30 seconds. Be careful not to burn the garlic.
- Add chopped mini bell peppers to the skillet and cook until they begin to soften, about 3-5 minutes. Add spinach and cook until wilted, about 2 minutes.
- Remove the skillet from heat and let it cool slightly.
- In a bowl, whisk eggs with salt, black pepper, dried oregano, and dried basil.
- Pour the egg mixture over the vegetables in the skillet. Stir gently to combine.
- Crumble feta cheese evenly over the top of the egg and vegetable mixture.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the eggs are set and the top is lightly golden. An inserted knife should come out clean.
- Let cool slightly before serving. Cut into wedges and serve warm.
