  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add minced garlic and red pepper flakes (if using) and cook until fragrant, about 30 seconds. Be careful not to burn the garlic.
  3. Add chopped mini bell peppers to the skillet and cook until they begin to soften, about 3-5 minutes. Add spinach and cook until wilted, about 2 minutes.
  4. Remove the skillet from heat and let it cool slightly.
  5. In a bowl, whisk eggs with salt, black pepper, dried oregano, and dried basil.
  6. Pour the egg mixture over the vegetables in the skillet. Stir gently to combine.
  7. Crumble feta cheese evenly over the top of the egg and vegetable mixture.
  8. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the eggs are set and the top is lightly golden. An inserted knife should come out clean.
  9. Let cool slightly before serving. Cut into wedges and serve warm.
