Mediterranean Chickpea Bowls with Feta
A healthy and flavorful bowl packed with Mediterranean flavors like chickpeas, feta, and fresh vegetables.
Ingredients
- 1.5 cans (19 oz), drained and rinsed Chickpeas (canned)
- 150 g Feta Cheese
- 1 cup, diced Cucumber
- 1.5 cups, diced Tomatoes
- 1/2 cup, thinly sliced Red Onion
- 1/2 cup, pitted and halved Kalamata Olives
- 3 tbsp Olive Oil
- 2 tbsp Lemon Juice
- 1 tsp Dried Oregano
- To taste Salt and Pepper
Instructions
- In a large bowl, combine chickpeas, cucumber, tomatoes, red onion, and kalamata olives.
- In a small bowl, whisk together olive oil, lemon juice, dried oregano, salt, and pepper.
- Pour dressing over the chickpea mixture and toss gently to combine.
- Crumble feta cheese over the top.
- Serve immediately. Optionally, serve over a bed of greens or with pita bread.
