  1. Preheat oven to 375°F (190°C). Lightly grease 7 individual oven-safe dishes or a large baking dish with some olive oil.
  2. In a large pan, heat 2 tablespoons of extra virgin olive oil over medium heat. Add minced garlic and cook for 30-60 seconds until fragrant, being careful not to burn.
  3. Add fresh baby spinach (working in batches if necessary) and cook, stirring, until fully wilted. Remove from heat and gently squeeze out any excess water from the spinach.
  4. Return the pan to medium heat and add the remaining 2 tablespoons of olive oil. Add halved cherry tomatoes, sliced Kalamata olives, chopped sun-dried tomatoes, dried oregano, dried thyme, and red pepper flakes (if using). Cook for about 3-4 minutes, until tomatoes just start to soften.
  5. Stir the wilted spinach back into the pan with the tomato mixture. Season with sea salt and freshly ground black pepper to taste.
  6. Distribute the vegetable mixture evenly among the prepared dishes or spread in the large baking dish.
  7. Evenly sprinkle the crumbled good quality feta cheese over the vegetable mixture.
  8. Carefully crack 2 large eggs into each individual dish, or evenly space 7 eggs over the mixture in a large dish.
  9. Bake for 15-20 minutes, or until the egg whites are completely set and the yolks are cooked to your desired consistency (longer for firmer yolks, shorter for runny yolks). Ensure the internal temperature of the whites reaches 165°F (74°C) if food safety guidelines for fully cooked eggs are strictly followed.
  10. Carefully remove the dishes from the oven. Garnish with fresh chopped parsley or dill, if desired.
  11. Serve immediately, perhaps with a side of avocado or cucumber salad for extra healthy fats.
