Maple Oat Pancakes with Berry Compote
Fluffy oat pancakes infused with maple syrup, topped with a mixed berry compote.
Ingredients
- 1 cup Instant Oatmeal or Old Fashioned Oats
- 1/2 cup All-purpose flour
- 2 tsp Baking powder
- 1/4 tsp Salt
- 1 cup Milk
- 1 Egg
- 2 tbsp Maple syrup
- 1 cup Mixed berries (fresh or frozen)
- 1/4 cup Water
- 1 tsp Lemon juice
- 1/2 tsp Vanilla extract
- 1/4 tsp Cinnamon
Instructions
- In a bowl, combine oats, flour, baking powder, salt, and cinnamon.
- In a separate bowl, whisk milk, egg, maple syrup, and vanilla extract.
- Pour wet ingredients into dry ingredients and mix until just combined. Avoid overmixing.
- Heat a lightly oiled griddle or frying pan over medium heat.
- Pour 1/4 cup of batter onto the griddle for each pancake.
- Cook for 2-3 minutes per side, or until golden brown and cooked through.
- In a small saucepan, combine mixed berries, water, and lemon juice.
- Bring to a simmer and cook until berries soften and sauce thickens slightly (about 5-7 minutes).
- Adjust sweetness with additional maple syrup if desired.
- Serve pancakes topped with berry compote. Garnish with a dusting of powdered sugar if desired.
