  2. In a separate bowl, whisk milk, egg, maple syrup, and vanilla extract.
  3. Pour wet ingredients into dry ingredients and mix until just combined. Avoid overmixing.
  4. Heat a lightly oiled griddle or frying pan over medium heat.
  5. Pour 1/4 cup of batter onto the griddle for each pancake.
  6. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  7. In a small saucepan, combine mixed berries, water, and lemon juice.
  8. Bring to a simmer and cook until berries soften and sauce thickens slightly (about 5-7 minutes).
  9. Adjust sweetness with additional maple syrup if desired.
  10. Serve pancakes topped with berry compote. Garnish with a dusting of powdered sugar if desired.
