Maple-Glazed Pork Chops with Roasted Carrots

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, toss chopped carrots with 1.5 tbsp of olive oil, thyme, salt, and pepper.
  3. Spread the carrots in a single layer on a baking sheet.
  4. In a small bowl, whisk together maple syrup, soy sauce, minced garlic, dijon mustard and 1.5 tbsp olive oil.
  5. Season pork chops with salt and pepper.
  6. Heat a skillet over medium-high heat. Add the pork chops and sear for 2-3 minutes per side, until browned.
  7. Pour the maple syrup glaze over the pork chops. Transfer the skillet (if oven-safe) or pork chops to a baking dish.
  8. Place the baking sheet with carrots and the skillet/baking dish with pork chops in the preheated oven. Roast for 12-15 minutes, or until pork chops reach an internal temperature of 145°F (63°C) and carrots are tender.
  9. Let the pork chops rest for a few minutes before serving. Serve the maple-glazed pork chops with roasted carrots.
