Maple-Glazed Pork Chops with Roasted Carrots
A classic Canadian-inspired dish with tender pork chops glazed with maple syrup, served with roasted carrots.
Ingredients
- 1.5 lb, cut into 3 chops, about 1-inch thick Pork Center Chops or Roast
- 1.5 lb, peeled and chopped Carrots
- 3 tbsp Maple Syrup
- 1.5 tbsp Soy Sauce
- 1.5 cloves, minced Garlic
- 3 tbsp Olive Oil
- 0.75 tsp Dried Thyme
- To taste Salt and Pepper
- 1 tsp Dijon Mustard
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, toss chopped carrots with 1.5 tbsp of olive oil, thyme, salt, and pepper.
- Spread the carrots in a single layer on a baking sheet.
- In a small bowl, whisk together maple syrup, soy sauce, minced garlic, dijon mustard and 1.5 tbsp olive oil.
- Season pork chops with salt and pepper.
- Heat a skillet over medium-high heat. Add the pork chops and sear for 2-3 minutes per side, until browned.
- Pour the maple syrup glaze over the pork chops. Transfer the skillet (if oven-safe) or pork chops to a baking dish.
- Place the baking sheet with carrots and the skillet/baking dish with pork chops in the preheated oven. Roast for 12-15 minutes, or until pork chops reach an internal temperature of 145°F (63°C) and carrots are tender.
- Let the pork chops rest for a few minutes before serving. Serve the maple-glazed pork chops with roasted carrots.
